Ingredients

8 oz rice noodles

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 tablespoon honey

1 teaspoon red pepper flakes (adjust to preference)

3 green onions, sliced

1 cup snap peas, trimmed

1 cup bell peppers, thinly sliced (choose your favorite color)

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions

Cook the Noodles:

Boil water in a large pot and add the rice noodles, cooking them according to the package instructions until tender. Once cooked, drain the noodles thoroughly, then set aside in a large bowl.

      Prepare the Garlic Butter Sauce:

In a spacious skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and grated ginger into the skillet. Sauté the mixture for 1-2 minutes until it becomes fragrant and the garlic turns a light golden color, taking care not to burn it.

          Add the Shrimp:

Raise the heat to medium-high. Add the peeled and deveined shrimp into the skillet. Cook the shrimp for approximately 2-3 minutes on each side, monitoring closely until they turn pink and opaque. Season with salt, pepper, and red pepper flakes to your liking for an added kick.

              Incorporate the Veggies:

Add the trimmed snap peas and thinly sliced bell peppers to the skillet. Stir and sauté everything together for another 2-3 minutes, allowing the vegetables to become tender yet remain crisp.

                  Finalize the Sauce:

Reduce the heat slightly and pour in the soy sauce, fresh lime juice, and honey. Stir well to combine all the flavors and let the sauce simmer for an additional minute, allowing it to thicken slightly.

                      Combine with Noodles:

Gently add the drained rice noodles into the skillet, tossing everything together to ensure the noodles are evenly coated in the garlic butter sauce. Continue to cook for another 1-2 minutes until the noodles are warmed through.

                          Serve:

Carefully divide the Garlic Butter Shrimp Noodle Bowls among four serving bowls. Garnish each bowl with freshly sliced green onions and sprigs of cilantro. Serve the dish with lime wedges on the side for an extra burst of citrus flavor.
