Ingredients

1 lb large shrimp, peeled and deveined

4 medium zucchini, spiralized into zoodles

4 cloves garlic, minced

1/4 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese

1/4 tsp red pepper flakes (adjust to taste)

3 tbsp olive oil

Salt and black pepper to taste

Juice of 1 lemon

Instructions

Prep the Zoodles: Begin by spiralizing the zucchini into zoodles using a spiralizer or a julienne peeler. Place the zoodles in a large colander to drain excess moisture and set aside.

Sauté the Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. When the oil is shimmering, add the minced garlic and sauté for approximately 30 seconds until it becomes fragrant but not browned.

Add the Shrimp: Toss the peeled and deveined shrimp into the skillet. Season them generously with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes, stirring occasionally, until the shrimp are pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.

Cook the Zoodles: In the same skillet, add the final tablespoon of olive oil. Introduce the zoodles and halved cherry tomatoes, sautéing everything over medium heat for about 2-3 minutes. The goal is to cook them until they're just tender, while still maintaining a slight crunch (al dente).

Combine Everything: Lower the heat to medium-low, then return the sautéed shrimp back to the skillet. Squeeze in the juice of one lemon and add half of the freshly chopped basil. Toss everything gently to combine, allowing the flavors to meld and heat through for another minute.

Serve: Remove the skillet from heat and finish by generously sprinkling grated Parmesan cheese and the remaining basil on top. Serve the dish warm, and enjoy every garlicky bite of this delightful zoodle dish!
