1 cup chickpea flour (besan)

2 tablespoons rice flour, for extra crispiness

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

½ teaspoon turmeric powder

½ teaspoon red chili powder (adjust to taste for spice level)

Salt, to taste

1-2 green chilies, finely chopped (optional for heat)

A handful of fresh cilantro, chopped

Water, as needed to create batter
