1/2 cup shredded cheddar cheese

1/4 cup sour cream

1 tablespoon olive oil

Salt and pepper, to taste

Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and green bell peppers, sautéing for approximately 3-4 minutes until they begin to soften. Next, stir in the diced green chilies and sauté for an additional 1-2 minutes, allowing the flavors to meld.

    Cook the Spinach: Add the chopped spinach to the skillet. Cook for about 1 minute, or until the spinach just wilts. Season the vegetable mixture with salt and pepper to enhance the flavors. Once done, remove the skillet from the heat and set it aside.

      Whisk the Eggs: In a separate bowl, crack the eggs and whisk them thoroughly until they are well combined. Add a pinch of salt and pepper to season the eggs.
