2 boneless, skinless chicken breasts

1 fresh pineapple, peeled, cored, and sliced into rings or chunks

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and black pepper, to taste

1 red bell pepper, diced

1 red onion, diced

1 cup cooked brown rice or quinoa

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Prepare the Marinade: In a mixing bowl, combine the olive oil, soy sauce, honey, garlic powder, ground ginger, salt, and black pepper. Whisk until the mixture is smooth and well blended.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure that all pieces are thoroughly coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. Meanwhile, slice the pineapple into rings for a classic look, or cut it into chunks if you prefer bite-sized pieces.

        Grill the Chicken: Once the grill is hot, remove the chicken from the marinade and let any excess marinade drip off. Place the chicken breasts on the grill, cooking for about 6-7 minutes per side. Ensure the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).

          Grill the Pineapple: In the last 5 minutes of grilling the chicken, add the pineapple rings or chunks to the grill. Grill them until they achieve beautiful grill marks and caramelize, roughly 3-4 minutes.

            Prepare the Veggies: While the chicken and pineapple are grilling, heat a skillet over medium heat. Add the diced red bell pepper and red onion, sautéing until they soften and become fragrant, about 5-7 minutes. Season with a pinch of salt and black pepper.

              Assemble the Bowls: In serving bowls, create a base layer with cooked brown rice or quinoa. Slice the grilled chicken and place it on top of the grains. Arrange the grilled pineapple and sautéed vegetables artfully over the chicken.
