Grilled Pineapple Popsicles

1 medium ripe pineapple, peeled, cored, and cut into spears

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 cup honey or agave syrup

1/2 cup full-fat coconut milk (for added creaminess)

1 teaspoon pure vanilla extract

Juice of 1 lime (about 2 tablespoons)

Pinch of sea salt

Optional: toasted coconut flakes, for garnish

Prepare the Pineapple: In a mixing bowl, combine the brown sugar and ground cinnamon. Toss the pineapple spears in this mixture until each piece is thoroughly coated, ensuring a sweet and spicy exterior.

    Grill the Pineapple: Preheat your grill to medium-high heat. Once the grill is hot, place the coated pineapple spears on it. Grill for about 3-4 minutes on each side or until beautiful grill marks appear and the pineapple begins to caramelize. Once done, remove the spears from the grill and let them cool slightly on a rack.

      Blend the Base: In a blender, combine the honey (or agave syrup), coconut milk, vanilla extract, lime juice, and a pinch of sea salt. Blend the mixture on high speed until it becomes smooth and creamy.

        Assemble the Popsicles: Take your popsicle molds and layer the grilled pineapple spears inside, ensuring they fit snugly without overcrowding. Carefully pour the creamy coconut mixture over the pineapple spears, filling each mold to the top.

          Freeze: Insert sticks into the molds firmly to keep them in place. Freeze the popsicles for at least 4-6 hours, or until they are completely solid.

            Serve: To remove the popsicles from the molds, run warm water over the outer surface for a few seconds to help them release. Gently pull the popsicles out. For an extra tropical touch, sprinkle with toasted coconut flakes before serving.
