2 large boneless, skinless chicken breasts

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup pepper jack cheese, shredded

1 cup sharp cheddar cheese, shredded

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 slices of sourdough or ciabatta bread

2 tablespoons olive oil

Fresh cilantro leaves, for garnish (optional)

Instructions
 

Prep the Chicken:

    - Begin by preheating your grill to medium-high heat.

      - While the grill warms up, season the chicken breasts evenly with garlic powder, smoked paprika, and a sprinkle of salt and pepper. Drizzle olive oil over the seasoned chicken, ensuring each piece is well-coated for added flavor.

        Grill the Chicken:

          - Carefully place the seasoned chicken breasts on the hot grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and let it rest for 5 minutes to retain juices.
