14 oz firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 medium onion, thinly sliced

3 cloves garlic, finely minced

1 inch piece of ginger, finely minced

2 cups Hatch green chiles, roasted, peeled, and diced (can be fresh or canned)

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

2 green onions, chopped

2 tablespoons hoisin sauce

Cooked rice or quinoa, for serving

Sesame seeds, for garnish

Instructions
 

Prep the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. In a medium-sized bowl, whisk together the soy sauce, sesame oil, and cornstarch until smooth. Add the tofu cubes to the bowl and gently toss to ensure all pieces are evenly coated. Allow the tofu to marinate at room temperature for 10-15 minutes to absorb the flavors.

    Heat the Oil: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering, carefully add the marinated tofu cubes in a single layer. Cook for approximately 5-7 minutes, gently turning occasionally, until the tofu is golden brown and crispy on all sides. Once done, transfer the tofu to a plate and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Introduce the sliced onion and sauté for about 2-3 minutes until it turns translucent. Next, add the minced garlic and ginger, stirring frequently for an additional minute, until aromatic.

        Add the Vegetables: Toss in the diced Hatch green chiles, sliced red bell pepper, and trimmed snap peas into the skillet. Combine with the aromatics and cook for about 5-6 minutes, stirring occasionally, until the vegetables are tender yet still vibrant and crisp.

          Combine Ingredients: Return the crispy tofu back into the skillet. Pour in the hoisin sauce, and gently toss everything together until all ingredients are evenly coated in the sauce. Allow the stir fry to cook for another 2-3 minutes, giving the flavors time to meld together beautifully.

            Serve: Remove the skillet from the heat. Garnish the stir fry with chopped green onions and a sprinkle of sesame seeds. Serve the hot stir fry over a generous bed of cooked rice or quinoa for a satisfying meal.
