1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

3 celery stalks, diced

1 large potato, peeled and diced

1 can (14 oz) diced tomatoes (with juices)

4 cups vegetable broth (or water)

2 teaspoons ground cumin

1 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

2 cups fresh spinach or kale, roughly chopped (optional)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes, or until it becomes translucent. Next, stir in the minced garlic and continue to sauté for an additional minute, allowing the garlic to release its fragrant aroma.

    Add Vegetables: Introduce the diced carrots, celery, and potato to the pot. Stir the mixture well to combine, and allow the vegetables to cook for approximately 5-7 minutes, until they begin to soften.

      Combine Lentils and Spices: To the pot, add the rinsed lentils, the can of diced tomatoes with their juices, the ground cumin, dried thyme, and bay leaf. Stir everything together to ensure the ingredients are evenly mixed.
