Hearty Slow Cooker Chili with a Secret Veggie Boost

1 pound ground beef (or turkey for a lighter choice)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any hue), chopped

2 medium carrots, shredded

1 medium zucchini, shredded

1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

1 (28 oz) can crushed tomatoes

2 cups vegetable broth

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon oregano

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions

Instructions
 

Heat olive oil in a skillet over medium flame, and sauté the chopped onion and minced garlic until they become soft and translucent, roughly 5 minutes.

    Introduce the ground beef (or turkey) to the skillet, cooking until it's browned. Use a spatula to break it apart as it cooks. Remove any excess grease.

      In the slow cooker, mix together the sautéed combination with the chopped bell pepper, shredded carrots, and shredded zucchini.

        Incorporate the kidney beans, black beans, crushed tomatoes, and vegetable broth.

          Season the chili with chili powder, cumin, paprika, salt, black pepper, and oregano. Stir thoroughly to blend all the components.

            Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, letting all the flavors merge harmoniously.

              When it's time to serve, give the chili a stir and taste for seasoning. Adjust as needed.

                Serve generous portions of the hearty chili in bowls, adding your preferred toppings like shredded cheese, sour cream, or sliced green onions.
