Ingredients

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 medium cucumber, thinly sliced

1 medium carrot, julienned

1 red bell pepper, thinly sliced

1 cup baby spinach leaves

½ cup alfalfa sprouts (optional)

½ teaspoon smoked paprika

¼ teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil (for optional drizzling)

Instructions

Prepare Your Workspace: Clear a large cutting board or a clean surface where you'll assemble the pinwheels, making it easy to roll them up.

Spread the Hummus: Take one whole wheat tortilla and, using a spatula or the back of a spoon, spread ¼ cup of hummus evenly across the tortilla, leaving a small border around the edges for easier rolling.

Layer the Veggies: Place a handful of baby spinach leaves in the center of the hummus-covered tortilla. On top of the spinach, arrange several thin slices of cucumber, a generous pinch of julienned carrot, and slices of red bell pepper. If desired, sprinkle alfalfa sprouts over the vegetables for added crunch and nutrition.

Season the Filling: Enhance the flavor of the filling by evenly sprinkling smoked paprika, garlic powder, salt, and pepper over the vegetable layers.

Roll it Up: Begin rolling the tortilla from the edge closest to you, taking care to tuck in the filling as you go to ensure a firm, tight roll. Continue to roll away from you until you reach the edge of the tortilla. Once rolled, gently press the seam to seal it.

Cut the Pinwheels: With a sharp knife, slice the rolled tortilla into 1-inch thick pinwheels. Arrange the pinwheels cut-side up on a serving platter for a visually appealing presentation.

Optional Drizzle: For an added burst of flavor, drizzle a little olive oil over the pinwheels just before serving.

Serve Fresh: Though these pinwheels are delightful when fresh, they can also be stored in an airtight container in the refrigerator for up to 2 days for convenient snacking.

Prep Time: 15 minutes | Total Time: 15 minutes | Servings: 4-6 servings

Presentation Tips: Consider garnishing the platter with additional alfalfa sprouts or a few carrot ribbons for a colorful touch. Serve with extra hummus on the side for dipping!
