2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (whole or 2%)

½ cup sour cream

3 tablespoons unsalted butter

¼ cup all-purpose flour (or almond flour for a gluten-free option)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon mustard powder

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for breadcrumbs)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This will ensure it's hot and ready for baking your mac and cheese.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente. Once cooked, drain the pasta and set it aside.

      Steam the Cauliflower: In a separate pot, steam the cauliflower florets for 5-7 minutes, or until they are tender but still firm (not mushy). Drain the cauliflower and set it aside as well.

        Make the Cheese Sauce:

          - In a large saucepan over medium heat, melt the butter. Once melted, add the flour and whisk together to form a roux. Cook for about 2 minutes, stirring continuously until the mixture turns a light golden color.

            - Gradually pour in the milk while whisking steadily to prevent lumps from forming. Continue whisking until the sauce thickens, about 3-5 minutes.

              - Add in the garlic powder, onion powder, mustard powder, and season with salt and pepper. Stir until well combined.

                - Remove the saucepan from heat and fold in 1 ½ cups of the shredded cheddar cheese and ½ cup of mozzarella cheese, stirring until the cheese is completely melted and the sauce is smooth.

                  Combine Ingredients: In a large mixing bowl, mix together the cooked pasta, steamed cauliflower, sour cream, and the prepared cheese sauce. Stir well to ensure that all ingredients are evenly coated with the creamy sauce.

                    Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or a little butter. Pour the macaroni and cheese mixture into the dish, spreading it out evenly.
