Ingredients

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus a little extra for topping)

1/2 cup Parmesan cheese, grated

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the jumbo pasta shells and cook according to package instructions until they are al dente, usually about 10-12 minutes. Once cooked, drain the shells and set them aside to cool slightly so they can be handled easily.

Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the shredded mozzarella cheese, grated Parmesan cheese, the egg, garlic powder, Italian seasoning, salt, and pepper. Stir everything together until the mixture is thoroughly combined and creamy.

Stuff the Shells: Using a spoon or a piping bag for more precision, carefully fill each cooked pasta shell with the spinach and cheese mixture. Ensure that each shell is generously filled for optimal flavor.

Preheat the Oven: While you’re stuffing the shells, preheat your oven to 375°F (190°C) to prepare for baking.

Layer the Marinara: In a 9x13 inch baking dish, spread a thin layer of marinara sauce across the bottom. This layer will help prevent the stuffed shells from sticking during baking.

Arrange the Shells: Neatly place the stuffed shells in a single layer over the layer of marinara sauce. Once arranged, pour the remaining marinara sauce evenly over the top of the shells, ensuring they are well coated for extra moisture and flavor.

Add Cheese Topping: Evenly sprinkle the remaining mozzarella cheese over the stuffed shells, creating a deliciously cheesy crust on top.

Bake: Cover the baking dish with aluminum foil to protect the cheese from browning too quickly. Bake in the preheated oven for 20 minutes. After this time, carefully remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Serve: Once baked, take the dish out of the oven and allow it to cool for a few minutes. For an aromatic touch, garnish with fresh basil leaves before serving. Enjoy this delightful cheesy dish warm!
