For the Tacos:

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 bell pepper, diced (choose any color for a vibrant look)

1 medium zucchini, diced into bite-sized pieces

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and black pepper to taste

1 tablespoon olive oil

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (optional, for a cheesy touch)

Fresh cilantro leaves, for garnish

For the Avocado Lime Sauce:

1 ripe avocado, halved and pitted

2 tablespoons freshly squeezed lime juice (from about 1 lime)

2 tablespoons Greek yogurt or sour cream

1 clove garlic, minced

Salt and black pepper to taste

Water (as needed to adjust consistency)

Prepare the Avocado Lime Sauce: In a medium mixing bowl, scoop the avocado flesh and mash it with a fork until creamy. Add the lime juice, Greek yogurt (or sour cream), minced garlic, and season with salt and pepper. Mix well until smooth. If the sauce is thicker than desired, gradually add a little water until you achieve your preferred consistency. Set aside for later.

    Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced bell pepper and zucchini. Sauté the vegetables for about 3-4 minutes, or until they begin to soften and become fragrant.

      Add the Beans and Corn: Next, stir in the black beans and corn. Sprinkle in the ground cumin, chili powder, and a pinch of salt and pepper. Continue cooking for an additional 5-6 minutes, stirring occasionally, until everything is thoroughly heated and flavors meld. Remove the skillet from heat.

        Warm the Tortillas: In another dry skillet over medium heat, gently warm each tortilla one at a time for about 30 seconds on each side, or until they become soft and pliable. You can keep them warm by placing them in a clean kitchen towel.

          Assemble the Tacos: Take each warmed tortilla and spoon a generous amount of the veggie mixture onto the center. Top with a handful of shredded lettuce, some diced tomatoes, and a sprinkle of shredded cheese, if desired. Drizzle the avocado lime sauce over each taco and finish with a few fresh cilantro leaves for garnish.
