Ingredients

1 pound large shrimp, peeled and deveined

1 ripe mango, peeled and diced

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons fresh lime juice

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Cooked jasmine rice or quinoa, for serving (optional)

Instructions

Make the Mango Glaze:

    - In a blender, combine the diced mango, honey, soy sauce, fresh lime juice, rice vinegar, minced garlic, minced ginger, and sesame oil. Blend until the mixture is smooth and creamy. Taste the glaze and adjust the seasoning by adding salt and pepper to your preference. If you like it sweeter, blend in a little more honey.

      Marinate the Shrimp:

        - Place the peeled and deveined shrimp in a medium-sized mixing bowl. Pour half of the mango glaze over the shrimp and toss gently to ensure they are well-coated. Allow the shrimp to marinate at room temperature for 15-20 minutes to soak up the flavorful glaze.

          Cook the Shrimp:

            - Heat a large skillet or wok over medium-high heat, adding a splash of oil to coat the bottom of the pan. Once the oil is shimmering, add the marinated shrimp (discarding excess glaze). Sauté the shrimp for 2-3 minutes on one side, until they begin to turn pink.

              Add the Glaze:

                - Flip the shrimp so the other side can cook. Pour the reserved mango glaze from the bowl over the shrimp. Continue cooking for an additional 2-3 minutes, stirring occasionally, until the shrimp are fully cooked (they should be opaque, firm, and beautifully coated in glaze).

                  Serve:

                    - Remove the skillet from heat and carefully transfer the shrimp to serving plates. Garnish generously with freshly chopped cilantro and serve with lime wedges on the side. For a heartier meal, serve over a bed of fluffy cooked jasmine rice or nutty quinoa, and drizzle with any remaining mango glaze if you wish.

                      Enjoy Your Tropical Bliss!
