1 block (14 oz) firm tofu, drained and pressed

1 ripe mango, peeled and diced

1/4 cup soy sauce

2 tablespoons maple syrup

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons vegetable oil (for frying)

Green onions, sliced, and sesame seeds for garnish

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. To ensure maximum crispiness, pat the cubes dry with a paper towel to remove any residual moisture, which will help them brown nicely during frying.

    Make the Mango Glaze: In a blender, combine the diced mango, soy sauce, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic. Blend the mixture until it's completely smooth, then set the glaze aside for later use.

      Cook the Tofu: Heat the vegetable oil in a non-stick skillet over medium heat. Once the oil is hot, carefully add the tofu cubes in a single layer. Fry the tofu for about 3-4 minutes on each side, or until they are golden brown and crisp. Use a slotted spatula to remove the tofu from the skillet and transfer it to a paper towel-lined plate to drain any excess oil.

        Thicken the Sauce: In a small bowl, combine the cornstarch and water, stirring until it forms a smooth slurry. Pour the mango glaze back into the skillet over medium heat. Once the glaze starts to simmer, slowly add the cornstarch slurry while continuously stirring until the sauce thickens, which should take about 2-3 minutes.

          Combine Tofu and Sauce: Return the crispy tofu to the skillet with the thickened mango glaze. Gently toss the tofu to ensure each cube is evenly coated in the sauce. Let everything cook together for an additional 1-2 minutes to heat through.
