Ingredients

4 medium carrots, peeled and cut into 1-inch pieces

3 medium turnips, peeled and cut into 1-inch cubes

2 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh parsley, finely chopped, for garnish (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup a breeze, line a baking sheet with parchment paper.

Prepare Vegetables: In a large mixing bowl, combine the peeled and cut carrot pieces and cubed turnips. Drizzle the olive oil over the vegetables and toss them gently until they are evenly coated with the oil.

Mix Dressing: In a small bowl, whisk together the maple syrup, Dijon mustard, garlic powder, thyme, along with a generous pinch of salt and pepper. Mix until all ingredients are thoroughly blended.

Combine: Pour the maple Dijon mixture over the prepared carrots and turnips. Use a spatula or wooden spoon to toss everything together, ensuring that each piece is generously coated with the glaze.

Roast: Spread the glazed carrots and turnips in a single layer on the lined baking sheet. Ensure that the vegetables have enough space between them, as this will help achieve a nice, even roast without steaming.

Bake: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through roasting, stir the vegetables to promote even browning and caramelization.

Serve: Once the vegetables are tender and beautifully caramelized, remove them from the oven and allow them to cool for a few minutes. Transfer to a serving dish, sprinkle with finely chopped fresh parsley for a pop of color if desired, and enjoy a warm, flavorful side dish.
