Ingredients

2 cups rolled oats

1/2 cup chopped pecans, plus extra for topping

1/3 cup pure maple syrup

2 cups almond milk (or any milk of your preference)

1 ripe banana, thoroughly mashed

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Optional toppings: a mix of dried fruits (like cranberries or raisins), additional pecans, milk, or a generous drizzle of maple syrup

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a standard muffin tin by either greasing each cup with a little oil or lining them with paper liners for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pecans, baking powder, ground cinnamon, and salt. Mix thoroughly to ensure an even distribution of the dry ingredients.

Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, mashed banana, applesauce, pure maple syrup, and vanilla extract until the mixture is smooth and well blended.

Combine Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir gently but thoroughly until all the oats and pecans are well incorporated and evenly coated with the wet mixture.

Fill Muffin Tin: Using a spoon or a small ladle, fill each cup of the prepared muffin tin approximately 3/4 full. If you like, sprinkle extra chopped pecans or your choice of dried fruits on top for added texture and flavor.

Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes. You'll know they are ready when the edges turn golden brown and the center feels set when gently touched.

Cool and Serve: Take the muffin tin out of the oven and allow it to cool for about 10 minutes. Once cooled, carefully remove the oatmeal cups from the tin. Serve them warm, optionally drizzling with additional maple syrup or adding your favorite toppings.

Prep Time, Total Time, Servings: 10 minutes | 40 minutes | Makes 12 servings. Enjoy these delightful oatmeal cups as a wholesome breakfast or a satisfying snack!
