Ingredients

2 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 package of wonton wrappers

Olive oil spray

Fresh basil leaves (for garnish)

Marinara sauce (for serving)

Instructions

Prep the Zucchini: Begin by preparing the zucchinis. Using a spiralizer or a vegetable peeler, carefully slice the zucchinis into long, thin strips. These will serve as the pasta for your ravioli, so ensure they are flexible enough to fold and shape.

Prepare the Filling: In a mixing bowl, add the ricotta cheese, grated Parmesan cheese, garlic powder, dried oregano, and a pinch of salt and pepper. Stir the mixture thoroughly until it becomes creamy and the ingredients are well combined.

Assemble the Ravioli: On a clean, flat surface, lay out the wonton wrappers. For each wrapper, place about a teaspoon of the ricotta filling in the center. Add a slice of zucchini on top of the filling. Carefully fold the wrapper over the filling to create a pocket. Use your fingers to firmly press the edges together, sealing them well to prevent any filling from leaking during the cooking process.

Preheat the Air Fryer: Switch on your air fryer and preheat it to 375°F (190°C). This should take approximately 5 minutes, ensuring the ravioli cook evenly.

Air Fry the Ravioli: Once preheated, lightly spray the air fryer basket with olive oil to prevent sticking. Arrange the ravioli in a single layer in the basket, making sure they do not touch each other. Give the tops of the ravioli a gentle mist of olive oil spray to aid in achieving a crispy texture. Air fry for 8-10 minutes, or until the ravioli are golden brown and crisp.

Serve and Garnish: After cooking, carefully remove the ravioli from the air fryer and allow them to cool slightly on a plate. Serve the mini zucchini ravioli drizzled with marinara sauce and garnished with fresh basil leaves for an aromatic touch.
