2 cans young green jackfruit in water or brine, thoroughly drained and rinsed

1 tablespoon extra virgin olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup of your favorite BBQ sauce

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and freshly cracked black pepper, to taste

12 small slider buns

1 cup nacho cheese sauce (can be dairy or vegan, as preferred)

1 cup pickled jalapeños, sliced

1 cup fresh tomatoes, diced

1 cup shredded lettuce

Fresh cilantro, for garnish

Prepare the Jackfruit: Begin by shredding the drained jackfruit pieces into smaller, stringy bits using your hands or a fork until it resembles the texture of pulled pork. Set the shredded jackfruit aside for later use.

    Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 4-5 minutes or until the onions are soft and translucent. Next, stir in the minced garlic and cook for an extra minute, allowing the garlic to become fragrant and golden.

      Simmer the Jackfruit: Introduce the shredded jackfruit to the skillet, followed by the BBQ sauce, smoked paprika, and ground cumin. Mix everything well to coat the jackfruit evenly in the sauce and spices. Allow the mixture to simmer on medium heat for about 20 minutes, stirring occasionally. The jackfruit should become tender and absorb all the delightful flavors. After simmering, season with salt and freshly cracked black pepper to your taste.
