4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 can (14 oz) diced tomatoes, including juices

1 cup low-sodium chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1 cup fresh mozzarella cheese, cut into cubes

Fresh basil leaves, for garnish

Cooked spaghetti or crusty bread, for serving

Instructions
 

Heat the Pan: In a large skillet, pour in the olive oil and heat it over medium heat until shimmering.

    Sear the Chicken: Season both sides of the chicken breasts with salt and pepper. Carefully place them in the hot skillet and sear for approximately 5-6 minutes on each side, or until they turn a beautiful golden brown. Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the diced onion and sauté for about 2-3 minutes, or until it becomes translucent. Then, add the minced garlic along with the sliced red and yellow bell peppers. Continue to cook for another 5 minutes, stirring occasionally, until the peppers have softened.

        Add Tomatoes and Broth: Pour the canned diced tomatoes, including all the juices, into the skillet followed by the chicken broth. Stir the mixture well to combine all the flavors.

          Season: Sprinkle in the dried oregano, dried basil, and optional red pepper flakes for a bit of heat. Allow the mixture to come to a gentle simmer.

            Return the Chicken: Gently place the seared chicken breasts back into the skillet, ensuring they are mostly submerged in the sauce. Cover the skillet with a lid and let it simmer for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F and the sauce thickens slightly.

              Add Mozzarella: Remove the lid and sprinkle the cubed fresh mozzarella over the chicken. Cover the skillet again for about 2-3 minutes, allowing the cheese to melt into a gooey delicious layer.
