2 cups fresh or canned cherries, pitted and halved (if using canned, drain and reserve the juice)

1 cup graham cracker crumbs

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

1 cup cream cheese, softened to room temperature

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

Fresh mint leaves for garnish

Prepare the Cherry Filling: If using fresh cherries, remove the pits and cut them in half. For canned cherries, ensure they are thoroughly drained. In a mixing bowl, combine the cherries with 1-2 tablespoons of sugar to boost their sweetness. Mix gently and set aside to allow the flavors to combine.

    Make the Graham Cracker Crust: In a medium-sized bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles damp sand and can hold its shape when pressed. This will serve as the base for your parfaits.
