One-Pan Cheddar and Bacon Mac 'n Cheese for Game Day

8 oz elbow macaroni

4 cups chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 strips of bacon, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tbsp butter

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp mustard powder

1/4 tsp cayenne pepper (optional)

Salt, to taste

1/4 cup sliced green onions (for garnish)

Instructions
 

In a large skillet or Dutch oven over medium heat, cook the diced bacon until it becomes crispy. After cooking, use a slotted spoon to remove the bacon and set it aside, letting the bacon drippings remain in the pan.

    In the same skillet, add the chopped onion and sauté for approximately 3-4 minutes until it becomes tender. Next, stir in the minced garlic and cook for another minute until it releases its aroma.

      Introduce the elbow macaroni to the skillet and add the chicken broth. Stir thoroughly to combine and bring the mixture to a light boil.

        Lower the heat and cover the skillet. Allow it to simmer for about 8-10 minutes, or until the pasta is al dente and most of the liquid has absorbed, stirring occasionally.

          Take the skillet off the heat. Mix in the butter, smoked paprika, black pepper, mustard powder, and cayenne pepper (if using) until everything is well blended.

            Slowly incorporate the shredded cheddar and mozzarella cheeses, stirring until they are melted and the mixture is creamy.

              Gently fold in the crispy bacon and combine thoroughly. Adjust the seasoning with salt as needed.

                Serve right away, topped with chopped green onions for added color and taste.
