Ingredients

8 oz elbow macaroni

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons unsalted butter

1 cup sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup crumbled goat cheese

1 cup diced salami

1 cup prosciutto, torn into bite-sized pieces

1/2 cup black olives, sliced

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: slices of baguette for serving

Instructions

Cook the Pasta: In a large pot, bring the chicken or vegetable broth to a rolling boil. Carefully add the elbow macaroni and cook according to package instructions until al dente. Once done, drain the pasta and set it aside.

Prepare the Cheese Sauce: In the same pot, melt the unsalted butter over medium heat until bubbly. Pour in the heavy cream and allow it to come to a gentle simmer. Stir in the garlic powder and onion powder, and season with salt and pepper to taste.

Incorporate the Cheeses: Lower the heat to low-medium and gradually add in the shredded sharp cheddar and Gruyère cheese, stirring constantly until they melt and the mixture becomes creamy. Gently fold in the crumbled goat cheese until it's evenly mixed in.

Combine Pasta & Sauce: Return the cooked macaroni to the pot with the warm cheese sauce. Using a spatula, gently fold the pasta into the sauce until it's completely coated with the luscious cheese mixture.

Mix in Charcuterie Ingredients: Add the diced salami, torn prosciutto, sliced black olives, and halved cherry tomatoes to the creamy mac and cheese. Stir gently to ensure that the charcuterie elements are evenly distributed throughout the dish.

Garnish and Serve: Once the ingredients are well combined, remove the pot from the heat. Sprinkle the freshly chopped parsley on top for a burst of color and flavor. Allow it to sit for a couple of minutes to thicken slightly before serving. Optional: Pair with toasted slices of baguette on the side for a delightful crunch.
