12 oz (340 g) penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

4 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 cup fresh basil leaves, chopped

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté the Garlic: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, making sure to stir continuously to avoid burning.

    Combine Ingredients: Pour in the canned diced tomatoes (including their juices), followed by the vegetable broth, penne pasta, Italian seasoning, and a pinch of salt and pepper. Stir everything together to ensure the pasta is well submerged in the liquid.

      Cook the Pasta: Increase the heat to bring the mixture to a boil. Once it reaches a boil, lower the heat to a simmer and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the majority of the liquid has been absorbed.
