8 oz (225g) penne pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (recommended: cremini or button)

5 oz (140g) fresh spinach, roughly chopped

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (with extra for serving)

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Fresh basil leaves for garnish

Prep the vegetables: Start by rinsing the spinach under cool water. Once clean, chop it roughly. Slice the mushrooms evenly, and finely chop the onion. Finally, mince the garlic cloves and set aside all the prepared vegetables.

    Sauté aromatics: In a large pot or Dutch oven, pour in the olive oil and place it over medium heat. Once the oil is hot, add the chopped onion. Sauté for about 3-4 minutes, stirring occasionally, until the onion turns translucent. Then, add the minced garlic and cook for an additional minute, allowing the flavors to meld and the garlic to become fragrant.

      Cook the mushrooms: Introduce the sliced mushrooms to the pot. Stir frequently and cook for approximately 5 minutes, until the mushrooms have softened, released their moisture, and started to turn a golden brown color.

        Add the spinach and spices: Lower the heat slightly and stir in the chopped spinach, dried thyme, dried oregano, and red pepper flakes (if using). Cook for about 2-3 minutes, mixing well, until the spinach has wilted down and reduced in volume.
