2 ripe peaches, pitted and diced into small chunks

1/4 cup soy sauce (low sodium preferred)

2 tablespoons pure maple syrup

1 tablespoon rice vinegar

1 teaspoon freshly grated ginger

1 garlic clove, finely minced

1 tablespoon sesame oil

1 teaspoon cornstarch dissolved in 1 tablespoon cool water (optional for thickening)

2 green onions, sliced thinly (for garnish)

Toasted sesame seeds (for garnish)

Cooking oil (for frying, such as vegetable or canola)

Prepare the Tofu: Begin by slicing the pressed tofu into 1-inch thick cubes. Heat a non-stick skillet over medium-high heat and drizzle in a small amount of cooking oil. Once the oil is shimmering, carefully add the tofu cubes to the skillet. Fry them until golden brown and crisp on all sides, which should take about 8-10 minutes. Once done, remove the tofu from the skillet and set it aside on a paper towel-lined plate.

    Make the Peach Glaze: Using the same skillet, add the diced peaches along with the soy sauce, maple syrup, rice vinegar, grated ginger, and minced garlic. Cook this mixture over medium heat, stirring occasionally to prevent sticking, until the peaches become soft and start to break down, approximately 5-7 minutes.
