Ingredients

For the Peach Salsa:

2 ripe peaches, diced into small pieces

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced

1/4 cup fresh cilantro, finely chopped

Juice of 1 lime (about 2 tablespoons)

Salt and freshly ground black pepper, to taste

For the Fish:

1 lb white fish fillets (such as tilapia or mahi-mahi)

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

For the Tacos:

6-8 corn or flour tortillas

1 cup shredded cabbage (purple or green for added color)

1/2 cup crumbled feta or queso fresco (optional)

Lime wedges, for serving

Instructions

Prepare the Peach Salsa: In a medium mixing bowl, combine the diced peaches, finely chopped red onion, minced jalapeño, chopped cilantro, and lime juice. Gently mix the ingredients until well combined. Season the salsa with salt and black pepper to taste. Allow it to sit for at least 10 minutes so the flavors can meld together.

Marinate the Fish: In a small bowl, whisk together the olive oil, chili powder, ground cumin, garlic powder, and a pinch of salt and pepper. Rub this mixture evenly over the fish fillets, ensuring they are fully coated. Let the fillets marinate at room temperature for about 15-20 minutes to enhance their flavor.

Grill the Fish: Preheat your grill to medium-high heat. Once hot, carefully place the marinated fish fillets on the grill grates. Grill for approximately 3-4 minutes per side, or until the fish is opaque and easily flakes apart with a fork. After grilling, remove the fish and allow it to rest for a few minutes to retain moisture.

Warm the Tortillas: While the fish is resting, place the tortillas on the grill for about 30 seconds on each side, just long enough to warm them up and make them pliable. Alternatively, you can warm them in a skillet over low heat.

Assemble the Tacos: Lay each warm tortilla flat and fill them with a generous portion of grilled fish. Top with a handful of shredded cabbage and a spoonful of the peach salsa. If desired, sprinkle crumbled feta or queso fresco on top of each taco for a creamy finish.

Serve: Arrange the tacos on a serving platter and add lime wedges on the side for an extra burst of citrusy flavor. Enjoy your vibrant and delicious Peach Salsa Grilled Fish Tacos!
