Ingredients

2 cups Greek yogurt (choose between plain or vanilla for added flavor)

1/2 cup creamy peanut butter (feel free to substitute with your favorite nut butter)

1/4 cup honey or maple syrup (adjust sweetness to your preference)

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon (optional for a hint of spice)

1 cup granola (choose store-bought or make your own for a personal touch)

1/2 cup mixed nuts (coarsely chopped, optional for added crunch)

1/4 cup dark chocolate chips (optional for a touch of sweetness)

Fresh fruit slices (like banana or strawberries for added freshness, optional)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, pure vanilla extract, and ground cinnamon (if using). Whisk vigorously until the mixture is smooth and fully blended, ensuring there are no lumps.

Line the Baking Sheet: Prepare a baking sheet (approximately 9x13 inches) by lining it with parchment paper. Make sure the paper overhangs on the edges to help with easy lifting after freezing.

Spread the Mixture: Pour the well-mixed yogurt and peanut butter concoction onto the lined baking sheet. Using a spatula, evenly spread it out until you achieve a thickness of about 1/4 inch.

Add Toppings: Evenly distribute the granola over the yogurt mixture, pressing it down slightly for adhesion. If desired, sprinkle chopped mixed nuts, dark chocolate chips, and arrange fresh fruit slices for a burst of color and flavor.

Freeze the Bark: Carefully place the baking sheet into the freezer. Allow the mixture to freeze for approximately 4-6 hours, or until the yogurt bark is set and completely solid.

Cut and Serve: After freezing, remove the baking sheet from the freezer. Gently lift the bark out using the overhanging parchment paper and transfer it to a cutting board. Use a sharp knife to cut it into rectangles or simply break it into shards by hand for a rustic look.

Storage: Store any leftover pieces in an airtight container and keep in the freezer for up to 2 weeks. Enjoy the bark as a cold, refreshing snack or a satisfying dessert straight from the freezer!

Prep Time: 15 minutes | Total Time: 6 hours 15 minutes | Servings: About 12 pieces

Presentation Tips: Serve the bark on a chilled platter and garnish with extra fresh fruit slices for a vibrant and appealing presentation.
