Ingredients

2 cups rolled oats

1 cup pumpkin puree

1/2 cup honey or maple syrup

1/2 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/2 cup chopped nuts (choose from walnuts, pecans, or almonds)

1/2 cup dried fruit (options include cranberries, raisins, or apricots)

1/4 cup chocolate chips (optional)

Instructions

Preheat and Prepare: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, ensuring you leave an overhang on two sides. This will help you easily lift the bars out after baking.

Mix Wet Ingredients: In a spacious mixing bowl, add in the pumpkin puree, honey (or maple syrup), almond butter, and vanilla extract. Use a spatula or whisk to mix these ingredients together until they form a smooth and creamy consistency.

Combine Dry Ingredients: In a separate bowl, combine the rolled oats, pumpkin pie spice, ground cinnamon, and sea salt. Stir these dry ingredients together until they are well mixed.

Incorporate Nuts and Fruits: Gradually pour the dry mixture into the wet mixture, stirring gently to combine thoroughly. Once well combined, fold in the chopped nuts, dried fruit, and the optional chocolate chips, ensuring they are evenly distributed throughout the mixture.

Spread and Bake: Pour the granola mixture into the prepared baking pan. Using a spatula or your hands, press the mixture down firmly and evenly to create a compact and level layer.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes. You're looking for the edges to be golden brown and the center to feel set.

Cool and Cut: Once baked, remove the pan from the oven and let it cool for about 10 minutes. Using the parchment overhang, lift the bars out of the pan. Allow them to cool completely on a wire rack before cutting into squares or rectangles.

Store: Keep your granola bars stored in an airtight container at room temperature for up to a week, or in the refrigerator for extended freshness.

Prep Time: 15 minutes | Total Time: 1 hour | Servings: 12 bars

                    - Presentation Tips: Serve your granola bars neatly stacked on a platter, or individually wrapped in parchment paper tied with twine for a homemade gift presentation. Enjoy as a grab-and-go snack or a delightful addition to your breakfast!
