Ingredients

1 can (15 oz) pure pumpkin puree (ensure it's not pumpkin pie filling)

1 cup heavy cream

1 cup whole milk

3/4 cup packed brown sugar

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

Whipped cream, for serving (optional)

Crushed gingersnap cookies or pecans, for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Generously grease a 9-inch pie dish or a shallow baking dish with butter or non-stick cooking spray to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, heavy cream, whole milk, and vanilla extract. Use a whisk to blend until the mixture is smooth and creamy.

Combine Dry Ingredients: In a separate bowl, whisk together the brown sugar, eggs, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix until the ingredients are fully integrated and no lumps are visible.

Combine Mixtures: Slowly pour the pumpkin mixture into the bowl with the sugar and egg mixture. Whisk continuously as you combine them to ensure a uniform mixture without streaks of uncombined ingredients.

Pour into Dish: Carefully pour the combined pudding mixture into the prepared pie dish. Gently tap the dish against the counter to release any air bubbles that may have formed.

Bake: Place the dish in the center of the preheated oven. Bake for approximately 45-50 minutes, or until the pudding is mostly set yet still has a slight jiggle in the center. A toothpick inserted should come out mostly clean.

Cool: Once baked, carefully remove the pudding from the oven and let it cool at room temperature for around 20 minutes. The pudding will continue to firm up as it cools.

Serve: Once cooled, slice into squares or serve in individual ramekins for an elegant touch. Optionally, top with a dollop of whipped cream and sprinkle crushed gingersnap cookies or pecans to add texture.

Enjoy: Serve your delightful pumpkin pudding either at room temperature or chilled for a refreshing and flavorful fall dessert!
