12 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, finely chopped

1 cup shredded mozzarella cheese, divided (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Preheat the oven: Set your oven to 375°F (190°C) to preheat while you prepare the other components.

    Cook the pasta shells: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook according to the package instructions until they are al dente. Drain the shells carefully and lay them on a clean kitchen towel to cool slightly.

      Prepare the filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, ½ cup of shredded mozzarella, grated Parmesan cheese, the beaten egg, garlic powder, onion powder, and a generous pinch of salt and black pepper. Mix thoroughly until all ingredients are well incorporated and the mixture is creamy.

        Stuff the shells: Using a small spoon or a piping bag, carefully fill each cooked pasta shell with the ricotta and spinach mixture, packing it gently but firmly.

          Assemble the dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer over the sauced bottom. Pour the remaining marinara sauce over the top of the shells, ensuring they are well covered.

            Add cheese: Sprinkle the remaining mozzarella cheese generously over the top of the sauced shells for that delicious melty layer.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. Carefully remove the foil and continue baking for an additional 10 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
