Roasted Beet Hummus Toast

Ingredients
  

2 medium-sized beets, thoroughly washed and trimmed

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil (plus additional for roasting)

1 tablespoon freshly squeezed lemon juice

1 garlic clove, minced

1 teaspoon ground cumin

Salt and pepper, to taste

4 slices of whole-grain bread

Fresh herbs (such as parsley or dill) for garnish

Optional toppings: sliced radishes, crumbled feta cheese, or sunflower seeds

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Beets: Take each beet and wrap it individually in aluminum foil. Drizzle a small amount of olive oil over each beet, sealing them tightly in the foil. Place all the wrapped beets on a baking sheet and roast in the preheated oven for 45-60 minutes, or until they are fork-tender.

      Prepare the Beet Hummus: Once the beets have cooled enough to handle, carefully peel off their skins and chop them into rough pieces. In a food processor, add the chopped beets, drained chickpeas, tahini, 2 tablespoons of olive oil, lemon juice, minced garlic, ground cumin, and a sprinkle of salt and pepper.

        Blend Until Smooth: Process all the ingredients together until the mixture is smooth and creamy. If the consistency is too thick for your liking, add one tablespoon of water at a time until it reaches your desired creaminess. Taste and adjust the seasoning with more salt and pepper if necessary.

          Toast the Bread: While the hummus is blending, toast the slices of whole-grain bread until they are golden brown. You can use a toaster or a stovetop griddle for this step.
