1 cup canned pumpkin puree (or 1 medium-sized roasted fresh pumpkin)

1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons tahini

2 tablespoons olive oil, plus more for drizzling

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Water, as needed for desired consistency

Fresh parsley, chopped, for garnish

Optional: pumpkin seeds, for topping

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice about 1/4 inch off the top of the head of garlic, exposing the cloves. Drizzle with 1 teaspoon of olive oil, ensuring that the oil seeps into the cloves. Wrap the garlic tightly in aluminum foil and place it in the oven. Roast for 30-35 minutes until the cloves are soft and golden. Once roasted, allow to cool slightly, then squeeze the individual cloves out of their skins into a small bowl.

    Prepare the Hummus: In a food processor, combine the roasted garlic cloves, pumpkin puree, chickpeas, tahini, 2 tablespoons of olive oil, fresh lemon juice, ground cumin, smoked paprika, and a sprinkle of salt and pepper.

      Blend Until Smooth: Process the mixture on high speed until it is creamy and smooth. If the hummus appears too thick for your liking, gradually add water, one tablespoon at a time, blending after each addition until the desired consistency is reached.
