1 lb (450g) ground beef

1 medium onion, finely diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cans (15 oz each) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) diced tomatoes, including juice

2 cups beef broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, fresh cilantro, lime wedges, jalapeños, avocado slices

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes, stirring occasionally, until the vegetables are softened and the onions are translucent. Add the minced garlic and cook for an additional minute, stirring until fragrant.
