Savory Beef & Cheese Empanadas

For the Dough:

3 cups all-purpose flour

1 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1 large egg

1/2 cup cold water

1 tablespoon vinegar

For the Filling:

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1/2 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 egg, beaten (for egg wash)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the all-purpose flour and salt. Using a pastry cutter or your fingertips, cut the chilled, cubed butter into the flour until the mixture resembles coarse crumbs.

      - In a separate small bowl, whisk together the egg, cold water, and vinegar. Gradually pour this mixture into the flour mixture, stirring continuously until the dough begins to come together.

        - Transfer the dough to a lightly floured surface and knead it gently for about 5 minutes or until it becomes smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.

          Make the Filling:

            - Heat a large skillet over medium heat and add the ground beef. Cook the meat, breaking it up with a spoon, until it is browned and cooked through.

              - Add the finely chopped onion, minced garlic, and diced red bell pepper to the skillet. Sauté the mixture for about 5 minutes or until the vegetables are tender.

                - Stir in the ground cumin, smoked paprika, salt, and pepper, cooking for an additional 2-3 minutes. Remove the skillet from heat and let the filling cool for a few moments.

                  - Once slightly cooled, incorporate the shredded cheddar cheese and chopped fresh cilantro into the beef mixture until well combined.

                    Assemble the Empanadas:

                      - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

                        - On a floured surface, roll out the chilled dough to approximately 1/8 inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles from the rolled dough.

                          - Place a generous spoonful of the filling in the center of each dough circle. Fold the dough over to form a half-moon shape, pressing the edges together to seal securely. To ensure a tight seal, use the tines of a fork to crimp the edges.

                            - Brush the tops of the empanadas with the beaten egg to create a beautiful golden color as they bake.

                              Bake the Empanadas:

                                - Arrange the assembled empanadas on the prepared baking sheet, making sure to leave about 2 inches of space between them.

                                  - Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the empanadas are golden brown and flaky.

                                    Serve:

                                      - Allow the empanadas to cool for a few minutes on the baking sheet before serving. These delicious, savory treats are best enjoyed warm and pair wonderfully with a side of chimichurri or a zesty salsa for an added kick.
