Savory Breakfast Sandwich with Sausage & Egg

2 fresh English muffins, split and toasted

2 large eggs

4 oz breakfast sausage (either pork or turkey), casings removed

2 slices of sharp cheddar cheese

1/4 cup fresh spinach leaves, washed and dried

2 tbsp mayonnaise

1 tsp Dijon mustard

Salt and pepper, to taste

1 tbsp olive oil

Optional: Sliced avocado or tomato for garnish

Cook the Sausage: Heat the olive oil in a skillet over medium heat. Once the oil is shimmering, crumble the breakfast sausage into the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the sausage is browned and cooked through. Taste and season with salt and pepper as needed. Once finished, transfer it to a plate and keep warm.

    Fry the Eggs: In the same skillet, lower the heat to medium-low. Crack the eggs into the skillet gently, taking care not to break the yolks. Season lightly with salt and pepper. Cook for about 3-4 minutes or until the egg whites are set but the yolks remain runny. For a firmer yolk, you can flip the eggs and cook for an additional minute.

      Prepare the Sauce: In a small mixing bowl, combine the mayonnaise and Dijon mustard until smooth. Set this mixture aside as the flavorful spread for your muffins.
