2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 red bell pepper, diced

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cayenne pepper (optional for extra heat)

1 tablespoon olive oil, plus more for sautéing

8 small corn or flour tortillas

1 avocado, sliced
