2 cups fresh baby spinach

4 large eggs

1 cup baby potatoes, diced (or substitute with frozen hash browns)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh herbs (such as parsley or chives) for garnish

Cook the Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced baby potatoes, spreading them out evenly in the pan.
