Savory Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and black pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: diced red onion, crumbled feta cheese, hot sauce

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot and ready for roasting.

    Prepare the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes with olive oil, ground cumin, smoked paprika, chili powder, and a generous pinch of salt and black pepper. Toss the mixture until the sweet potatoes are evenly coated with the spices.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes out on a baking sheet in a single layer. Place them in the preheated oven and roast for 20-25 minutes. Stir the sweet potatoes halfway through to promote even cooking, until they are tender and slightly caramelized.

        Heat the Black Beans: While the sweet potatoes are roasting, take a small saucepan and add the rinsed black beans. Place it over medium heat and warm the beans for about 5-7 minutes, stirring occasionally. Season the beans with salt and pepper to taste.

          Prepare the Tortillas: For corn tortillas, heat a skillet over medium heat and warm each tortilla for about 30 seconds on each side until they're pliable. If you're using flour tortillas, wrap them in a damp paper towel and microwave for around 15-20 seconds until soft.

            Assemble the Tacos: Take a tortilla and add a generous spoonful of the roasted sweet potatoes. Follow this with a portion of the warmed black beans.
