Ingredients

8 slices of whole grain bread

1 cup cream cheese, softened to room temperature

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 large cucumber, thinly sliced into rounds

1/4 cup capers (optional, for an added kick)

Fresh dill sprigs, for garnish

Instructions

Prepare the Cream Cheese Mixture: In a medium mixing bowl, combine the softened cream cheese, finely chopped fresh dill, fresh lemon juice, garlic powder, salt, and black pepper. Using a spatula or a hand mixer, blend the mixture until it is smooth, creamy, and well incorporated.

Prepare the Bread: Place the 8 slices of whole grain bread on a clean surface or cutting board. For a neater presentation, you can trim the crusts off each slice, if desired.

Spread the Mixture: Take the cream cheese mixture and evenly spread it on one side of each slice of bread. Aim for a generous layer, ensuring that the entire surface is covered for maximum flavor.

Layer the Cucumbers: On 4 of the cream cheese-covered slices, meticulously layer the thin cucumber slices, ensuring they are evenly distributed. If you choose to use capers, sprinkle them over the cucumbers at this point for a delightful burst of flavor.

Assemble the Sandwiches: Place the remaining 4 slices of bread on top of the cucumber layers, with the cream cheese side facing down. Gently press the sandwiches together to help them stick.

Cut and Serve: Carefully cut each sandwich into quarters or halves, depending on your serving preference. You can present them flat on a platter or stand them upright in a decorative manner. Finish by garnishing each sandwich with a small sprig of fresh dill for an appealing touch.

Chill (Optional): If time allows, refrigerate the assembled sandwiches for about 30 minutes before serving. This will enhance the flavors and keep them refreshingly crisp.
