8 oz fresh figs, sliced (approximately 12 figs)

1 cup creamy goat cheese, softened

1 cup shredded mozzarella cheese

2 tablespoons honey

1 tablespoon balsamic glaze

1 tablespoon extra virgin olive oil

Fresh basil leaves, for garnish (optional)

Salt and freshly ground black pepper, to taste

Prepare the Figs: Start by washing the fresh figs thoroughly. Slice each fig into quarters and set them aside for easy assembly later on.

    Make Cheese Mixture: In a medium mixing bowl, combine the softened goat cheese and shredded mozzarella cheese. Season the mixture with a pinch of salt and freshly ground black pepper to enhance flavor. Mix thoroughly until the cheeses form a smooth and evenly blended mixture.

      Assemble Quesadillas: Take one tortilla and spread a generous layer of the cheese mixture (approximately 1/2 cup) over one half of the tortilla. Place several sliced figs atop the cheese, then drizzle with about one teaspoon of honey for a touch of sweetness. Fold the tortilla in half to create a quesadilla. Repeat this process with the remaining tortillas.

        Heat the Pan: In a large skillet, heat the extra virgin olive oil over medium heat. Once the oil is shimmering, carefully place one quesadilla in the skillet. Cook for 3-4 minutes, or until the bottom is golden brown and crispy.

          Flip and Cook: Using a spatula, gently flip the quesadilla over and cook the other side for an additional 3-4 minutes, ensuring it becomes golden and that the cheese has melted completely.
