1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

4 cups chicken broth

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Tortilla strips, for serving

Prepare the Ingredients: Begin by dicing the onion, red bell pepper, and jalapeño. Mince the garlic clove and set all prepared vegetables aside.

    Layer the Soup: In your slow cooker, layer the diced onion, red bell pepper, minced garlic, and jalapeño at the bottom. Place the boneless chicken breasts on top of the vegetable layer.
