Ingredients

2 lbs pork shoulder, cut into large chunks

4 Hatch green chiles, roasted, peeled, and diced (or substitute with 1 can of diced green chiles, if out of season)

1 medium onion, diced

4 cloves garlic, minced

1 cup low-sodium chicken broth

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Corn or flour tortillas (for serving)

Optional toppings: avocado slices, diced tomatoes, crumbled queso fresco, sour cream

Instructions

Prepare the Pork: Begin by placing the pork shoulder chunks into the slow cooker. Season the meat with salt, black pepper, ground cumin, smoked paprika, and dried oregano. Use your hands or a wooden spoon to toss the pork, ensuring each piece is evenly coated with the spices.

Add Aromatics: Scatter the diced onion and minced garlic directly over the seasoned pork. This will infuse the meat with their flavor as it cooks.

Incorporate Hatch Chiles: Fold the roasted and diced Hatch chiles into the slow cooker mixture. If you're using canned chiles, simply pour them directly into the pot without the need to chop.

Add Liquid: Pour the chicken broth over the layered ingredients in the slow cooker. Squeeze the fresh lime juice on top to enhance the dish with a bright, zesty flavor.

Cook Low and Slow: Cover the slow cooker with a lid and set it to cook on low for 8 hours or on high for 4-5 hours. The pork is ready when it becomes tender and pulls apart easily with a fork.

Shred the Pork: Once the cooking time is complete, carefully remove the pork from the slow cooker using tongs and place it in a large bowl. Utilize two forks to shred the pork into bite-sized pieces. Return the shredded pork to the slow cooker, stirring it to combine with the flavorful juices.

Serve Tacos: Warm the tortillas in a skillet over medium heat or in the microwave until pliable. Take a generous scoop of the Hatch chili pork mixture and fill each tortilla.

Add Toppings: Garnish your tacos with fresh cilantro, along with optional toppings like slices of avocado, diced tomatoes, crumbled queso fresco, and a dollop of sour cream for extra creaminess.

Enjoy: Serve the tacos immediately while they’re still warm, and savor the smoky, spicy flavors of your delicious Hatch Chili Pork Tacos!
