1 pound ground turkey (or beef for a richer flavor)

1 tablespoon extra-virgin olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 red bell pepper, finely diced

1 can (15 ounces) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

2 tablespoons taco seasoning (store-bought or homemade)

1 cup shredded cheddar cheese

½ cup salsa (plus additional for serving)

Fresh cilantro, chopped (for garnish)

Avocado, sliced (for serving)

Lime wedges (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure a perfect cook on the spaghetti squash.

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of each half with extra-virgin olive oil, then sprinkle with salt and pepper to taste. Place the halves cut-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-40 minutes, or until the flesh is fork-tender.

      Cook the Filling: In a large skillet over medium heat, warm the tablespoon of olive oil. Once hot, add the diced onion. Sauté for about 3-4 minutes until it becomes translucent. Next, add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until the peppers soften slightly.

        Brown the Meat: Increase the heat to medium-high and add the ground turkey (or beef) to the pan. Cook until browned and fully cooked through, about 5-7 minutes. Use a spatula to break up the meat as it cooks. If there’s any excess fat, drain it off.
