2 cups cooked black beans (canned or homemade)

1 cup sweet corn (fresh, frozen, or canned)

1 cup cooked rice (white, brown, or cilantro-lime)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to your spice preference)

Salt and black pepper, to taste

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Avocado slices, and lime wedges (for serving)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures a hot environment for the burrito bake, allowing the cheese to melt perfectly.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the finely chopped red onion. Sauté for about 3-4 minutes or until the onions turn translucent. Next, add the minced garlic and cook for an additional minute, stirring frequently until the garlic becomes fragrant.

      Mix the Filling: To the skillet, incorporate the cooked black beans, sweet corn, diced tomatoes, and cooked rice. Sprinkle in the ground cumin, chili powder, smoked paprika, cayenne pepper, as well as salt and black pepper to taste. Stir everything together and allow it to cook for 5-7 minutes, so the mixture heats through nicely and the flavors meld beautifully.
