Spicy Buffalo Tofu Wraps

1 block (14 oz) firm tofu, pressed and drained

1/2 cup buffalo sauce (store-bought or homemade)

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup non-dairy milk (or regular milk)

4 large whole wheat tortillas (or your preferred wraps)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sliced red onion

1/2 cup vegan ranch dressing (or regular ranch dressing)

Fresh cilantro or parsley for garnish (optional)

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. Use a paper towel to gently pat the cubes dry, ensuring they are not too moist, which will help the breading adhere better.

    Coating the Tofu: In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and black pepper. In another bowl, pour in the non-dairy milk. In a third bowl, place the panko breadcrumbs. This setup will create an efficient breading station.

      Breading Process: Take each tofu cube and first dip it into the flour mixture, coating all sides. Next, immerse it in the non-dairy milk, allowing the excess to drip off. Finally, roll the cube in the panko breadcrumbs, pressing lightly to ensure an even coverage. Set the breaded tofu on a plate and repeat until all cubes are coated.

        Frying the Tofu: Heat about 1/4 cup of oil in a frying pan over medium-high heat until shimmering. Carefully add the breaded tofu cubes in batches, ensuring not to crowd the pan. Fry each side until golden brown and crispy, typically around 3 to 5 minutes. Once crispy, remove the tofu and place it on a plate lined with paper towels to absorb excess oil.
