1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)

1 large sweet potato, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

1 red bell pepper, chopped into bite-sized pieces

1 can (14 oz) diced tomatoes with their juices

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust according to your spice preference)

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

Prepare the Chickpeas:

    - If using dried chickpeas, soak them in plenty of water overnight. The next day, drain and rinse thoroughly, then cook in a pot of boiling water for about 1 hour, or until they are tender. Drain and set them aside. If using canned chickpeas, simply drain and rinse them under cool water.

      Sauté the Aromatics:

        - In a large heavy pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until it becomes translucent. Next, stir in the minced garlic and chopped red bell pepper, cooking for an additional 3-4 minutes until the vegetables are softened and fragrant.
