Ingredients

14 ounces firm tofu, pressed and cubed

2 tablespoons vegetable oil

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup fresh broccoli florets

1 cup snap peas, trimmed

4 green onions, chopped (separate white and green parts)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon soy sauce

1 tablespoon sriracha (adjust to heat preference)

1/4 cup creamy peanut butter

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

Cooked rice or quinoa, to serve

Crushed peanuts, for garnish

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Tofu: Start by pressing the tofu to eliminate any excess moisture, then cut it into 1-inch cubes. In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is shimmering, carefully add the tofu cubes. Cook for approximately 6-8 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides. Once cooked, remove the tofu from the pan and set it aside.

Stir-Fry the Vegetables: In the same skillet, add the sliced red and yellow bell peppers, broccoli florets, and snap peas. Stir-fry these vegetables for about 4-5 minutes, or until they are bright in color and tender yet still crisp. Next, add the white portions of the chopped green onions, along with the minced garlic and ginger. Stir-fry for an additional 1-2 minutes, ensuring the garlic and ginger become fragrant but do not burn.

Make the Sauce: In a separate small bowl, combine the soy sauce, sriracha, creamy peanut butter, rice vinegar, honey (or maple syrup), and sesame oil. Whisk the mixture until smooth and well blended.

Combine Tofu and Sauce: Return the crispy tofu to the skillet with the sautéed vegetables. Gradually pour the prepared peanut sauce over the stir-fry mixture and gently toss everything together to ensure the tofu and vegetables are evenly coated. Continue to stir-fry for another 1-2 minutes, allowing the dish to heat through and the sauce to thicken slightly.

Serve: To serve, distribute the cooked rice or quinoa among serving bowls. Generously spoon the spicy peanut tofu stir-fry over the grains. Finish with garnishes of crushed peanuts, sesame seeds, the green parts of the chopped green onions, and fresh cilantro if desired.

Enjoy your vibrant and flavorful Spicy Peanut Tofu Stir Fry Bowl!
