2 cups fresh strawberries, hulled and diced

1/4 cup granulated sugar (adjust according to the sweetness of the strawberries)

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

1/2 teaspoon cornstarch

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup honey or maple syrup

Prepare the Strawberries: In a medium mixing bowl, add the diced strawberries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Gently toss the mixture until the strawberries are well-coated in the sweetened mixture. Allow it to sit for about 15 minutes to let the sugars draw out the strawberry juices.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Take an 8-inch square baking dish and line it with parchment paper, leaving a bit of overhang on the sides to assist with removing the bars later.

      Create the Oat Mixture: In a large mixing bowl, combine the rolled oats, all-purpose flour, packed brown sugar, baking powder, and salt. Pour in the melted butter and honey (or maple syrup), then stir the mixture until it forms a crumbly texture, similar to coarse crumbs. If necessary, use your hands to ensure the melted butter is thoroughly mixed in.

        Assemble the Bars: Take half of the oat mixture and press it firmly into the bottom of the prepared baking dish to form a sturdy base.
